Lepat Pisang

Steamed Banana Parcels

8 large bananas (about 700 – 800 g)

200 – 250 g sugar

500 g flour

½ cup of fresh grated coconut (whites only)

¼ tsp salt

1 cup coconut milk

Enough banana leaves for wrapping (you can use foils but it would not give the nice aroma)

Clean the banana leaves. Soften the leaves by running it quickly over the fire on stove top or dipping it in hot water for a while, then cut into rectangular squares of 8 x 6 inches.

Mash bananas until smooth. In a large bowl, mix all the ingredients together. Put about 2 spoonfuls of the mixture on a piece of cut banana leaf. Wrap into a longish shape. Fold the ends to the bottom. (Make sure the mixture are all wrapped properly and securely) Continue with the rest of the mixture until finished. Arrange the wrapped bananas in a steamer and steam for 20 – 30 minutes.
