(Second-try)
Tried this muffin from Allrecipes twice. The first try, the muffin was lovely, so chocolatey but quite dry. So tried baking it again, this time with a little addition according to the reviews. This time the texture was much better. Below is my version.
2 cups flour
½ cup cocoa powder
1 ½ cups white sugar
½ tsp baking soda
2 tsp baking powder
¼ tsp salt
1 ½ cups milk (originally 1 ¼ cups)
1 egg
3 tbsp vegetable oil (originally 2 tbsp)
1 tsp vanilla
1 cup chocolate chip
¾ cup chopped walnut (didn’t have this)
1/3 cup whole almond (didn’t have this either)
4 tbsp white sugar
Sift together flour, cocoa powder, baking soda, baking powder and salt into a bowl. Add sugar and mix well. In another bowl, mix together milk, egg, vege oil and vanilla. Make a well in the flour and pour in liquid ingredients. Mix until just combined. Add chocolate chips and chopped walnut and mix well. Spoon batter ¾ into muffin pan or muffin cups. Sprinkle white sugar and drop an almond on the top. Bake for 25 minutes in a preheated oven at 180 degrees Celsius.
