This tandoori chicken recipe is from “Dari Dapur Zarina” recipe book.
1 chicken (about 1 kg) – cleaned and skinned
In a bowl, mix well the ingredients below:
1 tsp sliced ginger
(Ground finely garlic and ginger)
2 tsp chilli powder
1 tsp coriander powder
½ tsp turmeric powder
1 tbsp curry powder (I always use meat curry powder)
2 tsp yoghurt or tairu
Juice from ½ lemon
A little bit of red colouring (I’ve never used this)
Salt to taste
Make deep slashes on the thick parts of the chicken. Coat the spice mixture on the chicken and its inner part. Marinate for a whole day or at least 6 hours. Heat the oven to 225 – 250 deg C. Brush a little bit oil onto the chicken and grill for 1 hour or until cooked. Baste occasionally with remaining marinade.
Serve with slices of cucumbers, tomatoes, lemon and mint dressing.
